You can cook it the way the Scandnavians do.... put it on a bed of kosher salt and bake it in the oven at 350. The salt will absorb the fishiness and leave a really nice flavor. Check it after about half an hour for doneness.

After filleting. season your fish with salt and pepper and dredge in some all purpose flour. heat a saute pan on medium heat and add 2 or 3 tablespoons of olive oil. saute your fish until for a few minutes on each side until golden brown and cooked through. take your fish out and leave your pan on the heat. add a 1/2 cup of wine and reduce by half. when your wine is reduced take your pan off the heat and swirl in a few tablespoons of butter. this is your sauce...season with salt and pepper and some fresh lemon juice.

Get some parchment paper. cut fillets so they are about 1/3 as long and no more than 1/2 was wide as the paper place it off to one end allowing room to fold the paper and seal it put slices of onion & lemon on top drizzel about 1/2tsp evoo over it. salt and pepper to taste. Fold the paper over fish and in a angle fold/twisty action seal the bag. Cook in the oven on 350 for 20-25min depending on size of fillets. serve in paper with your favorite rice or other side dish....oo I have made my self hungry. good luck
