Pan Roasted/Baked Lapu-Lapu



This is one of my favorite dish and is actually my specialty. Try this out and you'll get nothing but complements.

Ingredients:

mayonnaise
olive oil
Dill
garlic
salt
pepper
Lemon
Bay leaves
Green paper
shallots
Butter

and of course Lapu Lapu (half kilo will do)


Preparation:

Clean the guts of the lapu lapu through its mouth

Reminder: do not make an incision in the stomach area

Remove scales and tips of fins.

Wash and dry it with paper towels, or you can just put it on a strainer.

Season the Lapu Lapu with salt and pepper, and some thinly sliced lemon rounds and dill into the stomach cavity.

Cut 2 slits (diagonal - each side) each fish and stuff the slits with lemon slices and bay leaves.



Take two whole bulbs of garlic and slice off the “top” of the bulb, slightly exposing the cloves of garlic within, check the photo above and you'll know what i mean...

sliced the onions (8-10), shallots

Put the lapu-lapu fishes on the pan
put the onions,shallots,green pepper, put some olive oil

then stick the pan into a pre heated 400F oven for 15 minutes!

Once done, season it again with lemon juice!
and about 3 tablespoons of butter!

for the sauce, just combine these ingredients: mayonnaise
olive oil
Dill
garlic
salt
pepper
Lemon
