Sinigang na Lapu-lapu with Shrimps
Sinigang is one of my favorite Filipino dishes with variety of ingredients. It is typically sour and is often cooked with stewed fish, shrimp or meat. It is usually prepared with tamarinds or artificial flavorings such as sinigang mix. The usual vegetables needed for this dish are okra, spinach, radish, and string beans, etc. Some use guava as it is less sour than those with tamarind, while i saw some uses mangga - the green one.
Ingredients:
500 g shrimp
3 lapu-lapu fish heads
1 big onion diced
1 big tomato quartered
2 pcs. long green pepper
6 pcs tamarind or ready made sinigang mix
4 cups water
Vegetables of your choice
How to cook:
1. Boil Tamarind in water to soften. Pound and extract all juices and set aside. - not needed if you will use sinigang mix
2. In a casserole, put together water, Tamarind juice (or sinigang mix), onions and tomatoes.
3. Add in the shrimps, lapu-lapu fish heads and green pepper simmer for 5 minutes.
4. Add the vegetables, fish sauce-optional and salt and cook until the vegetables are done.
Serve Sinigang na Ulo ng Lapu-Lapu With Shrimps while its hot! This is a healthy food that Filipinos love to eat over and over again.

Pan Roasted/Baked Lapu-Lapu
This is one of my favorite dish and is actually my specialty. Try this out and you'll get nothing but complements.
Ingredients:
mayonnaise
olive oil
Dill
garlic
salt
pepper
Lemon
Bay leaves
Green paper
shallots
Butter
and of course Lapu Lapu (half kilo will do)
Preparation:
Clean the guts of the lapu lapu through its mouth
Reminder: do not make an incision in the stomach area
Remove scales and tips of fins.
Wash and dry it with paper towels, or you can just put it on a strainer.
Season the Lapu Lapu with salt and pepper, and some thinly sliced lemon rounds and dill into the stomach cavity.
Cut 2 slits (diagonal - each side) each fish and stuff the slits with lemon slices and bay leaves.
Take two whole bulbs of garlic and slice off the “top” of the bulb, slightly exposing the cloves of garlic within, check the photo above and you'll know what i mean...

Put the lapu-lapu fishes on the pan
put the onions,shallots,green pepper, put some olive oil
then stick the pan into a pre heated 400F oven for 15 minutes!
Once done, season it again with lemon juice!
and about 3 tablespoons of butter!
for the sauce, just combine these ingredients: mayonnaise
olive oil
Dill
garlic
salt
pepper

Fried lapu – lapu with pineapple sauce
Here's another recipe that will surely entice you! A simple dish that's perfect for lunch or dinner. It's the Fried lapu – lapu with pineapple sauce!

I used lapu-lapu for this one but any firm, fleshy fish like labahita and maya-maya will do.
This recipe serves 2 to 3 persons:
Ingredients :
1 lapu-lapu (1 kilo)
half a carrot, peeled
2 chili picante, tops cut off, seeds scraped off, then julienned
a slice of ginger, an onion, peeled and sliced
3 cloves of garlic, minced
1 c. of unsweetened pineapple juice
1 tbsp. of lemon or kalamansi juice
1 tsp. of tapioca (or corn) starch
sugar
salt
pepper
1 tbsp. of flour
a cup of cooking oil
Cooking procedure :
Clean the fish off course, then season it with salt and pepper, including the cavity.
In a small sauce pan, mix the pineapple juice and lemon or kalamansi juice. Add sugar, depending on your liking. Stir in the starch until completely dissolved. Cook over medium heat, stirring occasionally, until thick and clear. Cover and simmer for about 5 minutes. Set aside.
Heat the cooking oil in a frying pan. Dredge the fish in flour and over high heat, deep fry it until a crisp coating has formed, flipping halfway through the cooking to fry both sides evenly.
Remove the fish from the oil and drain on paper towels or place on a strainer to allow excess oil to drip off.
Then in another Pan saute the onion, garlic, carrot, bell pepper and ginger for about 45 seconds or just until they are cooked
Place the fish on a serving platter. Arrange the vegetables on top. Pour the sauce over the fish and vegetables. Serve it while its hot!

Here's what you need for Lapu-Lapu with oyster sauce
Lapu-Lapu fishes about a kilo
Vegetable/Sesame Oil
Large Skillet
Steamer
Pepper - 1 table spoon
Garlic - 3 cloves
Carrot
Celery
Onion
Red Pepper
Oyster Sauce
Preparation/cooking - 20-30 minutes
pre-heat your cooking pan!

minutes, then set aside
2. Heat vegetable oil in large skillet

This is an easy to prepare lapu-lapu recipe that will surey knock your guests socks-off! A sure shot Lapu-Lapu recipe that will make your tummy happy.
Here's what you need for the Hot & Chili Fried Lapu-Lapu recipe
1 kg Lapu-Lapu
1 pack Crispy Fry breading mix / any breading mix will do
2 tablespoons chili powder
cooking oil
Preparation/cooking - 20-30 minutes
pre-heat your cooking pan!
1. clean your lapu-lapu fish, and place it into a bowl or plate
2. pour the chili powder and apply it evenly to all the lapu-lapu fishes
3. pour in the Crispy Fry breading mix, and make sure to cover the lapu-lapu fishes
evenly.
4. since we pre-heated the cooking pan, it's about time to pour in the cooking oil.
5. Fry the breaded Lapu-Lapu, until golden brown.
Well Done!

Easy to Prepare Lapu-Lapu Recipes | Crab Meat Stuffed Lapu-Lapu
This is a sure shot Lapu-Lapu recipe that will surely be loved by your guests or impress your loved ones. You may substitute the crab with shrimp if you like. You may also double the amount of bread crumbs in the stuffing mixture of this Lapu-Lapu recipes. This Lapul-Lapu recipe also works on other fish recipes as well, for it can be substituted with tilapia, flounder, catfish, cod, sea bass or trout, I prefer Lapu-Lapu though and extra crab instead of bread, to make it a hell of crabby experience.
This lapu-lapu recipes’ versatility doesn’t end here though, you can add extra garnish or spices or even sprinkle little shredded parmesan cheese on top to give it color and texture. This lapu-lapu recipe actually falls down the baked lapu-lapu recipes category. But don't worry, for i'll be working on a grilled lapu-lapu recipes next.
Now.. drum rollin..I present to you
Lapu-Lapu Recipes | Crab Meat Stuffed Lapu-Lapu
INGREDIENTS:
*
1 rib celery
*
1 onion
*
4 tablespoons of butter
*
1/4 cup of parsley
*
½ cup of bread crumbs
*
1 can of drained and flaked crab meat
*
1 tablespoon of lemon juice or calamansi juice
*
1/8 tablespoon of cayenne pepper
*
6 lapu-lapu fillets
*
Melted butter
*
Paprika powder or chili powder
INSTRUCTIONS:
1. Chop the onion, celery into very pieces.
2. Then, Sautee them with butter in a frying pan until they are tender.
3. Scatter parsley into the pan.
4. Remove the frying pan from the heat and stir in bread crumbs and crab
meat, along with lemon juice (calamansi) and cayenne pepper.
5. Grease a 9x14 inch oven pan.
6. Spread the crab meat mixture over the Lapu-Lapu fillets and roll 'em up.
7. Place the stuffed Lapu-Lapu in the greased dish, seam side down, then add
melted butter and paprika powder or chili powder.
8. Place the stuffed Tilapia in the oven and bake the rolls at 400° Fahrenheit.
Let it stay in the oven for 20 minutes, then wholla.. You're done!!!

About Lapu Lapu Fish
Lapu-Lapu is a Fish, Not the hero of the Philippines
When you google-up lapu-lapu, you'll end up in a site discussing about the brave hero of Mactan, Lapu-Lapu. At least you're a foot closer to finding out that the fish is named after him. Curious how did it become the namesake of the hero? Well here's the story behind all of this..It started when Portuguese Magellan came to Sugbo AKA Cebu. He planned to conquer the Island Mactan, where Lapu-Lapu is the chief captain. Of course, Lapu-Lapu resisted and it ended up as one of the most historical battle in the Philippines, The Battle of Mactan.
A battle between Lapu-Lapu along with his men and the Spaniards led by Ferdinand Magellan. In the end, Magellan was killed by one of Lapu-Lapu's comrades.
While Magellan was lying dead on the shore of Maktan, Lapulapu saw Pigafetta aboard one of the Spain's expedition's ships. He was cursing Lapulapu for killing his boss. Of course, Lapu-Lapu got mad and he shouted "Ikaw nagpakaaron-ingnon nga alagad ni Bathala. Apan wala kay kalainan sa inyong mga sundalo. Pareho ka sa isdang kugtong, gisubad nimo bisan ang among mga kababayen-an. Sukad karon dinhi sa akong gingharian ang kugtong tawgon na nga Pigafetta." in english [You're not a servant of God. You are no different from your soldiers, Like the fish "kugtong" devouring even our women.]
The scenario has been remembered as time passed. And since because pigafetta was hard for the Cebuano's tongue to pronounce, it evolved into pugapo.
On the other hand, In Pigafetta's annals of the expedition, he did not mention the name of the chieftain who killed his boss. Instead he narrated: "In the kingdom of Humabon they prepare a tasty kinilaw from a fish. This fish is called lapulapu."
When the Spaniards moved to Luzon, they conveniently forgot the name of the killer of their boss. They only remembered Pigafetta calling a tasty fish, Lapu-Lapu, which is the favorite fish of the locals.
