How do you cook steamed (lapu lapu) fish?

Clean and gut the fish first. In a fish plate (a little bigger than the fish) place some leeks at the bottom. Place the fish on top of that. Then on top of the fish place some slivers of ginger and some stalks of green onions. Season to taste... My rule of thumb is 10min for every pound of fish(fresh not frozen). So if you got a 1 Kgm fish that's about 22 min. - Sonny O.
