Salsa Fresca Over Bass (or Lapu Lapu)

Make a salsa fresca and put over bass (or Lapu Lapu) then bake at 400 degrees until done.

Salsa fresca:

1 tomato 1/4" diced
1/2 red onion 1/4" diced
1 clove garlic 1/4" diced
Small bunch of Cilantro minced after removing stems.
1 canned jalepeno or about 12 slices, minced fine
1/2 salt

Cover the bass (or Lapu Lapu) with about 1/4 cup salsa
Bake in casserole pan and add about 1/4cup water to let the bass poach in.

BAKED LAPU LAPU (OR BASS)

2-3 lbs. Lapu Lapu (bass or other fish)
Mrs. Dash to taste
sliced onions
sliced fresh mushrooms
1/2 stick margarine
1/2 cup bread crumbs
2-3 Tbl. melted margarine
4 tsp. lemon juice

Split fish, place in foil-lined pan. Sprinkle with Mrs. Dash. Spread thing-sliced onions over fish. Spread mushrooms next. Melt the 1/2 stick marg. and pour over. Sprinkle with bread crumbs. Bake at 350 for 20-25"; test for doneness in thickest part. Mix melted 2-3 Tbl. marg. with lemon juice and pour over dish just before taking out of oven. If bread crumbs need crisping, put under broiler to brown.

BAKED HERBED LAPU LAPU - QUICK

2 lb. Lapu Lapu fillets (halibut; Chilean sea bass)
Tbsp. olive oil
1/2 tsp. lite garlic salt
1/2 tsp. marjoram leaves
1/3 tsp. thyme leaves
1/4 tsp. garlic powder
1/8 tsp. white pepper
2 bay leaves
1/2 c. chopped onion
1/2 c. of white wine or skim milk
Lime/lemon wedges to garnish

Preheat oven to 350 degrees. Wash fish, pat dry and place in dish. Combine oil with lite salt and herbs. Dribble over fish.
Top with bay leaves and onions. Sprinkle with paprika. Pour wine or skim milk over all. Bake, uncovered, for 20 to 30 minutes or until fish flakes easily with a fork. Serve with lime or lemon wedges

Key West-Style Baked Lapu Lapu

Prep Time: 10 Minutes
Cook Time: 15 Minutes
Ready In: 25 Minutes
Yields: 4 servings
"You'll enjoy a taste of Key West with this citrus flavored baked Lapu Lapu that will make you feel like you are on a romantic, tropical beach."

INGREDIENTS:
1/2 cup softened butter, plus more for baking dish
4 (8 ounce) fillets Lapu Lapu
1 teaspoon salt
1 tablespoon lemon pepper, or to taste

2 teaspoons garlic powder
2 teaspoons onion powder
1/4 cup key lime juice
1/4 cup fresh orange juice
12 slices lime
8 orange

DIRECTIONS:
1. Preheat oven to 325 degrees F (165 degrees C). Lightly butter a 9x13-inch glass baking dish and set aside.
2. Season the Lapu Lapu fillets with salt, lemon pepper, garlic powder, and onion powder; place into prepared baking dish. Spread about 2 tablespoons of softened butter over the top of each fillet. Pour in the lime and orange juices, then cover each fillet with 3 slices of lime, and 2 slices of orange.
3. Bake in preheated oven until fish is opaque and flakes easily with a fork, about 15 minutes.'

Pan Roasted/Baked Lapu-Lapu



This is one of my favorite dish and is actually my specialty. Try this out and you'll get nothing but complements.

Ingredients:

mayonnaise
olive oil
Dill
garlic
salt
pepper
Lemon
Bay leaves
Green paper
shallots
Butter

and of course Lapu Lapu (half kilo will do)


Preparation:

Clean the guts of the lapu lapu through its mouth

Reminder: do not make an incision in the stomach area

Remove scales and tips of fins.

Wash and dry it with paper towels, or you can just put it on a strainer.

Season the Lapu Lapu with salt and pepper, and some thinly sliced lemon rounds and dill into the stomach cavity.

Cut 2 slits (diagonal - each side) each fish and stuff the slits with lemon slices and bay leaves.



Take two whole bulbs of garlic and slice off the “top” of the bulb, slightly exposing the cloves of garlic within, check the photo above and you'll know what i mean...

Put the lapu-lapu fishes on the pan
put the onions,shallots,green pepper, put some olive oil

then stick the pan into a pre heated 400F oven for 15 minutes!

Once done, season it again with lemon juice!
and about 3 tablespoons of butter!

for the sauce, just combine these ingredients: mayonnaise
olive oil
Dill
garlic
salt
pepper
Lemon

Easy to Prepare Lapu-Lapu Recipes | Lapu-Lapu with oyster sauce Lapu-Lapu
This is an easy to prepare lapu-lapu recipe that will surely satisfy your appettite!

Here's what you need for Lapu-Lapu with oyster sauce

Lapu-Lapu fishes about a kilo
Vegetable/Sesame Oil
Large Skillet
Steamer
Pepper - 1 table spoon
Garlic - 3 cloves
Carrot
Celery
Onion
Red Pepper

Oyster Sauce

Preparation/cooking - 20-30 minutes
pre-heat your cooking pan!

1. Prepare/Clean all the vegetables
2. clean your lapu-lapu fish, Place fish on rack in steamer, cover and steam until tender, approx 4 to 5
minutes, then set aside
2. Heat vegetable oil in large skillet
minutes.
3. Saute garlic, red peppers, carrots, celery and onions using sesame oil,
4. Add fish
5. Turn out onto heated platter. M

Note: Lapu lapu is the name of a fish available in the
Philippines, but can be substituted by your favorite fish

Easy to Prepare Lapu-Lapu Recipes | Crab Meat Stuffed Lapu-Lapu

This is a sure shot Lapu-Lapu recipe that will surely be loved by your guests or impress your loved ones. You may substitute the crab with shrimp if you like. You may also double the amount of bread crumbs in the stuffing mixture of this Lapu-Lapu recipes. This Lapul-Lapu recipe also works on other fish recipes as well, for it can be substituted with tilapia, flounder, catfish, cod, sea bass or trout, I prefer Lapu-Lapu though and extra crab instead of bread, to make it a hell of crabby experience.

This lapu-lapu recipes’ versatility doesn’t end here though, you can add extra garnish or spices or even sprinkle little shredded parmesan cheese on top to give it color and texture. This lapu-lapu recipe actually falls down the baked lapu-lapu recipes category. But don't worry, for i'll be working on a grilled lapu-lapu recipes next.

Now.. drum rollin..I present to you

    Lapu-Lapu Recipes | Crab Meat Stuffed Lapu-Lapu

    INGREDIENTS:

        *
          1 rib celery
        *
          1 onion
        *
          4 tablespoons of butter
        *
          1/4 cup of parsley
        *
          ½ cup of bread crumbs
        *
          1 can of drained and flaked crab meat
        *
          1 tablespoon of lemon juice or calamansi juice
        *
          1/8 tablespoon of cayenne pepper
        *
          6 lapu-lapu fillets
        *
          Melted butter
        *
          Paprika powder or chili powder


    INSTRUCTIONS:

       1. Chop the onion, celery into very pieces.

       2. Then, Sautee them with butter in a frying pan until they are tender.

       3. Scatter parsley into the pan.

       4. Remove the frying pan from the heat and stir in bread crumbs and crab
           meat, along with lemon juice (calamansi) and cayenne pepper.

       5. Grease a 9x14 inch oven pan.
        
       6. Spread the crab meat mixture over the Lapu-Lapu fillets and roll 'em up.
        
       7. Place the stuffed Lapu-Lapu in the greased dish, seam side down, then add
           melted butter and paprika powder or chili powder.

       8. Place the stuffed Tilapia in the oven and bake the rolls at 400° Fahrenheit.
           Let it stay in the oven for 20 minutes, then wholla.. You're done!!!
