Quick, Simple and Easy

Lapu Lapu in tin foil and then on grill. Wrap it up and put some of your favorite salsa in and seal it up. Put it on the grill for about 20 to 25 minutes. About medium heat.

When its ready make sure no neighbors are around when you crack open the tin foil. Because you will not be able to get rid of them.

Fried Lapu Lapu Sandwich


Get some hoagie rolls and slice them open.

Put 1/2 cup of tartar sauce into a small bowl and mix in 2 tablespoons of ketchup and 2 teaspoons of horseradish. Season with 1 teaspoon of ground cumin and 1/2 teaspoon of ground cayenne pepper. Add a few pinches of salt and 1/2 teaspoon of cracked black pepper. Mix well, cover and set in the refrigerator for later.

Thinly slice a tomato and cut some leaf lettuce and set aside.

Use a cup of seasoned bread crumbs and a cup of flour as well as a tablespoon of cornstarch and mix together. Season with salt and pepper and set aside for dredging before frying.

Soak the Lapu Lapu fillet in 2 cups of buttermilk for a few hours keeping it in the fridge.

Get a large frying pan and add about 1 1/2 cups of peanut oil (or your peferred cooking oil) and heat the oil to about 350 degrees.

whip 3 eggs and add a tablespoon of buttermilk in a shallow bowl

Once the oil is hot remove the Lapu Lapu fillet from the buttermilk bath and dredge through the breadcrumb mixture then dredge in the egg mixture and back again through the breadcrumb..

Turn your oven broiler to the high setting and let it heat up then carefully place the Lapu Lapu fillet into the hot oil.

As the fillet is frying place the sliced hoagie rolls onto the top rack of your broiler for 2 minutes. Place a couple slices of your favourite cheese on the one side of the hoagie roll (preferably the topper side)

Remove the hoagie rolls after the cheese is fully melted and set them on a plate or a wire rack to slightly cool.

Turn the fish fillet over after about 3-4 minutes of frying time (the breading should be a golden brown, do not overcook)
and let the other side cook for a few minutes.

Remove the Lapu Lapu fillet from the oil and place onto paper towels or a paper grocery sack to drain

Put the Lapu Lapu fillet on your hoagie roll and use a knife or spoon to apply a liberal amount of the tartar sauce mixture, layer a few of the sliced tomatoes on top of that and sprinkle a pinch of salt and pepper to the tomato, add the lettuce and the top cover bun, cut, serve and enjoy.

Fried lapu – lapu with pineapple sauce



Here's another recipe that will surely entice you! A simple dish that's perfect for lunch or dinner. It's the Fried lapu – lapu with pineapple sauce!

I used lapu-lapu for this one but any firm, fleshy fish like labahita and maya-maya will do.

This recipe serves 2 to 3 persons:

Ingredients :

1 lapu-lapu (1 kilo)
half a carrot, peeled
2 chili picante, tops cut off, seeds scraped off, then julienned
a slice of ginger, an onion, peeled and sliced
3 cloves of garlic, minced
1 c. of unsweetened pineapple juice
1 tbsp. of lemon or kalamansi juice
1 tsp. of tapioca (or corn) starch
sugar
salt
pepper
1 tbsp. of flour
a cup of cooking oil

Cooking procedure :

Clean the fish off course, then season it with salt and pepper, including the cavity.

In a small sauce pan, mix the pineapple juice and lemon or kalamansi juice. Add sugar, depending on your liking. Stir in the starch until completely dissolved. Cook over medium heat, stirring occasionally, until thick and clear. Cover and simmer for about 5 minutes. Set aside.

Heat the cooking oil in a frying pan. Dredge the fish in flour and over high heat, deep fry it until a crisp coating has formed, flipping halfway through the cooking to fry both sides evenly.

Remove the fish from the oil and drain on paper towels or place on a strainer to allow excess oil to drip off.

Then in another Pan saute the onion, garlic, carrot, bell pepper and ginger for about 45 seconds or just until they are cooked

Place the fish on a serving platter. Arrange the vegetables on top. Pour the sauce over the fish and vegetables. Serve it while its hot!

Easy to Prepare Lapu-Lapu Recipes | Hot & Chili Fried Lapu-Lapu

This is an easy to prepare lapu-lapu recipe that will surey knock your guests socks-off! A sure shot Lapu-Lapu recipe that will make your tummy happy.

Here's what you need for the Hot & Chili Fried Lapu-Lapu recipe

1 kg Lapu-Lapu
1 pack Crispy Fry breading mix / any breading mix will do
2 tablespoons chili powder
cooking oil

Preparation/cooking - 20-30 minutes
pre-heat your cooking pan!

1. clean your lapu-lapu fish, and place it into a bowl or plate
2. pour the chili powder and apply it evenly to all the lapu-lapu fishes
3. pour in the Crispy Fry breading mix, and make sure to cover the lapu-lapu fishes
evenly.
4. since we pre-heated the cooking pan, it's about time to pour in the cooking oil.
5. Fry the breaded Lapu-Lapu, until golden brown.
